Calabash White Pairing

Looking for a simple pairing with Silver Coast Winery’s Calabash White? Try Chef Katie Picher’s Grilled Apple Cheddar Panini—a grilled cheese comfort with a playful twist!

Ingredients:

Raisin-Nut Bread (Chef choice: raisin walnut)
Cheddar Cheese
1/2 Apple of your choosing (Chef choice: Pink Lady)
3 Tbsp. Butter

Method Of Preparation:

La Brea Bakery is pretty common in most grocery stores these days. They have a superb Raisin Pecan Bread that makes for a decadent panini. Grab two slices from the loaf and butter the sides that will be toasted in the pan.

Find the apple of your choosing. My favorite are Pink Lady apples because they are a good combination of sweet and tart. Lay half of the apple on the cutting board—skin side up—and slice thinly.

Cut as much or as little cheddar cheese as you like from a cheese block. I’ve been dubbed the “Dairy Queen” for a reason, so I would typically go for about 2–3 thick slices.  Lay the cheddar on one of your slices of bread. Next, layer the apple slices on top of the cheese layer. Top with the other slice of bread. Now you’re ready to elevate the sandwich by cooking it!

Set the stove top to medium heat. Place pan on burner and add 1 tbsp. of butter. Let the butter start to melt. Put the sandwich in the pan, butter side down. Sear for about 1 min.  (You’re looking for a golden brown color to the bread.) Using a spatula, flip the sandwich and sear the other side of the sandwich. Cook for about 1 minute.

After getting the bread color you want, finish the sandwich in the oven at 350° F for about 5 minutes to make the cheese gooey. Before you know it, you have an ooeey, gooey, cheesy-apple panini that pairs well with Silver Coast’s Calabash White. Enjoy!
